Let’s talk about coconuts! I’ve always liked coconut, but since switching our family’s diet to a more whole food, paleo-friendly diet, I love coconut. Coconut fruit, coconut oil, coconut cream, coconut flour, coconut sugar, coconut aminos, coconut water… Coconut (which isn’t actually a nut) is such a versatile ingredient and can replace a whole host of less healthy or allergenic options.

    Wow! What a great list of recipes and ideas. I have pinned it so I can start experimenting with these. I’m a late comer to eating coconut because I was always put off as a child by German Chocolate Cake which was ruined (in my opinion) by adding the shredded coconut!

    I have gotten over that problem since I needed to eliminate dairy and have discovered that coconut really is great to cook with and well, tastes pretty good.

    I just made ice cream using coconut milk and carmelized bananas and it was great. I use coconut water in my smoothies every day and I bake with coconut oil.

    I’ve been thinking of trying gluten free but have heard mixed reviews. A concern of mine is also not having enough satisfactory recipes so this helps, thanks!
