Roasted Curry Cauliflower

Ingredients

head cauliflower

tablespoons
coconut oil
melted

teaspoons
curry powder

teaspoon
cumin
1
teaspoon
garlic powder
1/2
teaspoon
sea salt
1/2
teaspoon
freshly ground black pepper
Instructions
Preheat oven to 400 degrees.
Wash and chop cauliflower into bite sized florets.
Add cauliflower, coconut oil, and spices to a large mixing bowl.
Toss to evenly spread oil and seasonings.
Place in a single layer on a foil-covered baking sheet and roast for 30-35 minutes or until cauliflower is soft and starting to brown on the edges.
Notes
If you don't have coconut oil, olive oil works too.
