Summer came early on the West Coast this year. We’ve had warmer than usual weather lately, and when it’s this hot and sticky, I just don’t feel like drinking hot coffee. But you and I both know that the likelihood of a mom getting a full night’s sleep is about as likely as her kids picking up all their toys without being nagged. So I still need my caffeine fix, but I get it with a frosty frappe instead.
Sure, store bought frozen coffee drinks are delicious, but that’s because they’re chock full of sugar and other additives I can’t pronounce. Not to mention they’re expensive – that cost adds up over the summer! Making my own at home means I can enjoy my frosty caffeine fix without the guilt.
Making your own is a lot easier than you might think, as long as you have a jar of Folgers instant coffee on hand. Instant coffee is ideal for making fancy drinks like this – no brewing or special machines required. The delicious recipe I’m sharing with you today uses only four ingredients: instant coffee, coconut milk, honey, and vanilla extract. Add a blender and some ice cubes and there you have it.
I love how versatile instant coffee is. Besides making coffee, I use it to add flavour to pudding, ice cream, cheesecake, anything really. And of course for fancy drinks like this.
This is my favourite summer paleo-friendly coffee drink. Not only is it low in sugar, but it’s dairy-free so hubby can enjoy it too. Of course, I don’t have dairy allergies, so there’s nothing to stop me from adding a generous dollop of whipped cream on top! And then some grated dark chocolate for a hint of mocha. Yum!

Dairy-Free Coffee Coconut Frappe
Ingredients
- 1 1/2 cups full-fat coconut milk
- 2 tablespoons raw honey
- 1 teaspoon Folgers instant coffee crystals
- 1/2 teaspoon vanilla extract
- 4 ice cubes
- Optional: whipped cream and/or dark chocolate shavings for garnish
Instructions
- Add all ingredients except for ice cubes to a blender and blend well. Gradually add ice cubes and continue to blend until smooth and frothy.
