Today we visited Tee’s new school for an orientation meeting and potluck lunch. We got to meet the teachers and some other parents, and familiarize Tee with her classroom. Tomorrow is the first “real” school day when the kids will spend the entire day though, so tonight I made her first packed lunch of the new school year!
Tee is a creature of habit. All last year, she brought deviled egg salad sandwiches for lunch every day. Now I’m a fan of egg salad sandwiches because they’re quick and easy to make, and they have lots of protein to fuel her brain. Plus she really loves them so I don’t have to worry about her bringing back an uneaten lunch. But with the start of a fresh school year, I thought it would be nice to experiment and change things up a little. But not too much. Like pretty much every 5-year-old ever, Tee likes routine and she is not a fan of radical change.
Summer Fresh makes lots of dips and hummus spreads that I can use to transform any regular old sandwich into something extraordinary. Check out this Artichoke Asiago Prosciutto Salami Sandwich made with Summer Fresh Artichoke & Asiago Dip, sliced salami, sliced prosciutto, mozzarella cheese, and romaine lettuce. Mmm. Looks fantastic, doesn’t it?
And for vegetarian kids, there’s this Spicy Hummus Red Pepper Goat Cheese Sandwich with Summer Fresh Spicy Hummus, goat cheese, sliced sweet roasted red peppers, and romaine lettuce.
After checking out all the sandwich ideas from Summer Fresh, I was inspired to elevate Tee’s boring old egg salad sandwich into something special. With just a hard boiled egg, a couple of tablespoons of Summer Fresh Artichoke & Asiago dip, sliced green onions, a dash of curry powder, a dash of chipotle chili powder, and some spring greens on gluten-free bread, I made this delicious Artichoke & Asiago Egg Salad Sandwich for Tee’s school lunch tomorrow.
I let Tee lick the egg salad bowl and she kept asking for more, so I’m pretty sure this change is going to be a hit!
Artichoke & Asiago Egg Salad Sandwich
Ingredients
- 1 hard boiled egg
- 2 tablespoons Summer Fresh Artichoke & Asiago dip
- 1 teaspoon sliced green onions
- Dash of curry powder to taste
- Dash of chipotle chili powder to taste
- 2 slices bread of choice
- Butter optional
- Handful of fresh salad greens
Instructions
- Roughly mash hard boiled egg with a fork and mix with dip, green onions, and spices.
- Butter bread if desired.
- Layer salad greens on one slice of bread and spread egg salad on top.
- Place second slice of bread on top and slice sandwich if desired.

Curry in egg salad never would have thought to try that. Buttering your bread with egg , tuna or salmon helps keep bread from going soggy,
