Aargh! Just as my four-year-old is getting over her cold, now Kay has it. She’s coughing and feverish and wants to nurse all the time. If you’ve never had one, trust me when I tell you a sick toddler is CRANKY! My poor little baby is snotty, crabby, and clingy, all of which wreak havoc with the daily schedule, including meal prep.
It’s times like these that I’m grateful for my stash of super easy side dish recipes. This week I’m sharing one of those favourites – my roasted sweet potato bites. You may have heard that this month I’m doing a Whole30 nutritional challenge. Well, preparing every single meal with 100% whole, unprocessed foods means a lot of work. Throw sick kids into the mix, and we’re talking a Herculean task! But these kid-friendly roasted sweet potato bites are perfect for Whole30 or anytime because they’re delicious, so easy to make, and go with just about anything.
This is one of our favourite side dishes for meals anytime, but especially for holiday meals. Instead of sugar-laden traditional sides like candied yams or sweet potato casserole (a layer of marshmallows?!), I serve these for Thanksgiving and Christmas and they’re always a hit! I love how roasting brings out the sweetness without adding any sugar.
Interestingly, despite that sweet flavour, sweet potatoes have a low glycemic index which means they won’t spike your blood sugar. Both times I had gestational diabetes, one of the major changes I made was replacing all the white potatoes in my diet with sweet potatoes which helped me regulate my blood sugar levels.
Sweet potatoes are one of my favourite superfoods. These tubers are one of the best sources around of vitamin A (an antioxidant powerhouse), and they’re high in vitamins C, B5, B6, thiamin, niacin, riboflavin, and carotenoids (that’s the orange, baby!). They’re also a great source of fiber, potassium, and manganese.
So basically, viva la sweet potato! And next time you’re stuck for a side dish, make these.

Roasted Sweet Potato Bites
Ingredients
- 4 medium sweet potatoes
- 2-3 tablespoons extra virgin olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon sea salt
- 1/4 teaspoon chipotle chili powder
Instructions
- Preheat oven to 350 degrees.
- Peel and dice the sweet potatoes.
- Add all ingredients into a large mixing bowl and mix until potatoes evenly coated.
- Lay on a foil-lined baking sheet in a single layer.
- Bake for 30-35 minutes until soft.

I make sweet potato fries too, but with those you have to cut them exactly the same size and flip and fuss with. These sweet potato bites do remind me of fries but so much easier!
