Paleo Meatloaf with Balsamic Tomato Sauce #Recipe

A few weeks ago we bought three quarters of a cow from the farm down the road. That’s about 300 pounds of meat. Now that’s a lot of beef! Given that my freezer is packed to the brim full of steaks and ground beef, I thought I had better find some more recipes to use said beef. Last year I shared my paleo meatloaf muffin recipe, and it’s consistently been one of my most popular recipes both on my blog and at home. But it does require a lot of prep and cutting. Lately things have been so busy around here that I just haven’t had the time for that. I’ve been in need of a quick and tasty meatloaf recipe I can just whip up and throw in the oven for dinner. This, my friends, is it!

This easy paleo meatloaf recipe uses coconut flour and comes with a balsamic tomato sauce on top. Yummy!

Preheat the oven to 350 degrees. Start with two pounds of ground beef in a large mixing bowl. Add a small can of tomato paste, three eggs, a third of a cup coconut flour, three or four minced garlic cloves (I use the minced garlic that comes in a jar), and one small diced onion. Next add your seasonings: two teaspoons dried basil, two teaspoons ground black pepper, and one teaspoon each of chili powder, cumin, and sea salt. Mix everything up gently (don’t overmix or your meatloaf will become heavy and dense) and fill your loaf pan.

Now make your sauce with three tablespoons of tomato paste, two tablespoons balsamic vinegar, and about one teaspoon (more or less) of your sweetener of choice. I like maple syrup – it must be the Canadian in me! Spread the sauce on top of the meatloaf as it’s going into the oven.

Bake the meatloaf for about an hour or until the internal temperature hits 155 degrees. Allow it to rest for a few minutes before cutting (it tends to be a bit too crumbly otherwise) and enjoy!
 

Paleo Meatloaf with Balsamic Tomato Sauce

Ingredients
  

  • 2 lbs. ground beef
  • 1 5.5 oz. can tomato paste
  • 3 eggs beaten
  • 1/3 cup coconut flour
  • 3 cloves minced garlic
  • 1 onion diced
  • 2 teaspoons dried basil
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon sea salt

Sauce

  • 3 tablespoons tomato paste
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon maple syrup or honey

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix ground beef, tomato paste, eggs, coconut flour, garlic, onion, and seasonings in a large mixing bowl. Fill loaf pan.
  • To make sauce, mix tomato paste, balsamic vinegar, and maple syrup.
  • Spread sauce over top of meatloaf and bake in oven for about an hour or until internal temperature reaches 155 degrees.
  • Allow meatloaf to rest for 5 minutes before serving.

  • This version of meatloaf sounds pretty tasty! The sauce is different, but again, tasty. My guys would totally go for the maple syrup added.
    I’m all about veggies. I wonder if I can get away with tossing in a handful or two…

  • I love the spices cumin and chile powder together and have tried it with other meats so I am excited to try this meatloaf.I also like the sauce mixture that you have put on top.This sounds really delicious.

  • I never comment unless I’ve made it. And I try not to veer from the original recipe. Typically am able to pick out recipes from the net that suit our tastes. I had intended to share this w/my daughter who is on the Paleo diet. After tasting it, the whole 2 lb thing was fed to the dog. I’m sorry. I know other people will love it, but the non-traditional meat loaf seasonings didn’t sit well w/our palettes (i.e. balsamic vinegar, chili powder, basil, etc.)
