Kitchen Time With My Kids and Our ChocoCoco Peanut Butter Snack Bites Recipe

I’ve talked before about cooking with Tee. She’s five now, and she loves helping out in the kitchen any way she can. She’ll happily measure, pour, crack, peel, or stir whatever I give her as long as she gets to help. At two and a half, Kay is still pretty young, but she sees her older sister having fun and she wants to get into the act too. So today I decided to find something that both my daughters could help with. What’s easy to make and doesn’t require sharp edges or heat?

We decided to make some of these ChocoCoco Peanut Butter Snack Bites! Simple to make, no bake, and delicious. Plus they’re made with whole, healthy foods and free from refined sugar so I feel good about giving them to my girls to snack on.

Our starting point was the classic three-ingredient Peanut Butter Snack Bites recipe we all know and love: large flake rolled oats, Kraft All Natural Smooth Peanut Butter, and honey. But then we added our favourite healthy ingredients to make them truly our own: unsweetened cocoa powder, toasted unsweetened shredded coconut (I toast mine in batches beforehand), chopped macadamia nuts, and a little vanilla and cinnamon. Yum!

Of course, making these wasn’t just about having a pile of snack bites at the end. Making them was about spending quality time together. We had fun making these! Plus Tee was also learning how to read a recipe and how to measure ingredients, and Kay was learning how to follow directions, pour, mix, and roll the snack bites. That was the favourite part for both the girls actually. They loved rolling the balls, just like Play-Doh.

The girls did a great job and they were so proud of what they’d made! They couldn’t wait for Daddy to get home so they could tell him all about it and share the fruits of their labours.

Two of these snack bites are a great energy boost on-the-go and help tide the kids over until dinner. Plus they’re gluten-free and dairy-free so everyone in the family can eat them! (But if you need to avoid gluten, be aware that although oats are naturally gluten-free, they’re frequently cross-contaminated with wheat, barley, and/or rye during harvesting, transport, storage, processing, or packaging. Look for oats that are certified gluten-free.)

ChocoCoco Peanut Butter Snack Bites

Ingredients
  

  • 1 cup large flaked rolled oats
  • 1/2 cup Kraft All Natural Smooth Peanut Butter
  • 1/4 cup raw honey
  • 1/3 cup toasted unsweetened shredded coconut
  • 1/3 chopped macadamia nuts
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions
 

  • Mix together all ingredients in a medium bowl until blended.
  • Roll into 20 balls, about 1 inch in diameter or about 2 tablespoons for each, and place on ungreased baking sheet.
  • Chill for 20 to 30 minutes in the fridge before serving.

  • These look delicious! I really like that they are Gluten Free. They are definitely on my “To Try” list.

  • I’ve tried a similar recipe and loved it but yours with the macadamia nuts I suspect is tops!

  • Yum, these look amazing! My daughter has a peanut allergy… do you think these could be made with almond butter instead? The consistency is often runnier and I wonder if everything would “stick”.

    • I bet almond butter or cashew butter would work fine and taste delicious in these. There’s so much other “stuff” in there to hold it together. You can always tweak the amount of oatmeal or coconut if you found it too runny, but I doubt you’d need to. I’d love to hear how it goes if you try it!

  • These look great! My 2-year old would love them and they’d be a great rainy day activity for us to do together. I think I might try replacing the macadamia nuts with walnuts. Yum! Thanks for the recipe.

  • these are good but i didn’t use macadamia nuts. i used chia seeds. And i added a scoop of protein powder

  • I missed cooking with my kids when they were small – they never had an interest in it at all and I had such good memories of cooking/baking with my Grandmother. Since they are older now they actually are interested and I take advantage of it before they both leave for uni. And 1 of them leaves next fall.
