How Do You Griddle?

When we went from a family of two to a family of four, breakfast became a bit of a kerfuffle. Weekend breakfasts are usually free range eggs from our local farm, natural bacon, and maybe some banana pancakes, but all these things need a frying pan (or three!) so it takes forever to cook everything. By the time breakfast is ready to serve, some things are no longer at their best. I like my bacon crispy, not cold and chewy!

I’ve been telling hubby for a long time that we need one of those large griddles so we can cook everything all at once instead of using two frying pans and cooking in batches. We have a glass top stove so I wanted an electric griddle rather than the kind that sits right on top of the element and might scratch the glass. And then a couple of weeks ago I finally got one. Yay! This one: a Hard Anodized Jumbo Electric Griddle from Circulon Canada.

Last weekend I put this griddle to the family test and made brunch for everyone. To start with, I was able to cook all the bacon at once. Instead of juggling two frying pans with bacon slices curving up the sides and constantly rotating them to try and cook them all evenly, I laid ten slices flat on the griddle and cooked them evenly all at once. This was so much easier!

And then because I didn’t have to pay constant attention to the bacon, I was able to wash and cut up the fresh fruit salad while it was cooking. More time saved!

Once the bacon was done, the spout on the corner made it easy to pour out the bacon fat, and the PFOA-free non-stick coating was a dream to clean. I unplugged the cord and put the whole thing in my sink. Unlike my cast iron cookware, this griddle is lightweight and easy for me to lift, handle, and wash. A quick spray with the tap, a dab of soap, a couple of quick swipes with the dishcloth, and it was clean again and ready to do a big batch of my famous banana and egg pancakes.

Of course you can cook more than just bacon and pancakes on this. The next day we used the griddle to cook up some scrambled eggs with coconut milk. I love that the cooking surface was large enough to make two separate batches of scrambled eggs at the same time. One without the green onions, because Tee doesn’t like them, and a larger portion for the rest of us.

Next up will be hubby making grilled cheese sandwiches for the entire family all at once. I’m really looking forward to everyone getting to eat together at the same time instead of in shifts!
