Eat Smart, Eat Fresh, Eat Good!

On a typical weekday, I drag myself out of bed at the last minute, get the kids ready for school, jump in the shower, and put in a full day’s work. Then I rush down to the kids’ school to pick them up, race home, then start preparing dinner so we can eat at a halfway decent time, clean up, then put the kids to bed. Sound familiar?

I do my best to feed my family good, fresh food. Good food is the basis of good health, and I know that what I feed my kids now will influence how they eat as teenagers and even as adults. But cooking everything from scratch every night is a lot of work, so a little shortcut now and then is a good (and necessary) thing. Luckily, I recently discovered Eat Smart Salad Kits. They’ve made adding interesting and delicious salads to our meal plan a lot easier!

We eat these salads as is, or if I have a little more time, topped with last night’s leftovers. I love how versatile they are! Here’s how we’ve been adding these salads to our family dinners.

The Sweet Kale Salad Kit includes kale, green cabbage, broccoli, Brussels sprouts, chicory, roasted pumpkin seeds, dried cranberries, and a creamy poppyseed dressing. I don’t even like Brussels sprouts usually, but I really like this salad.

Eat Smart’s Strawberry Harvest Salad Kit combines kale, beet greens, broccoli stalk, carrots, red cabbage, crispy quinoa, almonds, feta cheese, and a strawberry vinaigrette. I served this with a roast a few days ago and added some fresh sliced strawberries for extra yum!

And then there’s my favourite, the Sunflower Kale Salad Kit. This mix has broccoli, green cabbage, kale, chicory, dried cranberries, and roasted sunflower seeds, and a delicious honey dijon dressing. I added some sliced sweet and spicy balsamic chicken on top, and it was a big hit for dinner the next night!

At Work: Salad Shake Ups

If Eat Smart Salad Kits are perfect for home, their Smart Salad Shake Ups are ideal for work! These prepackaged bowls of veggies and superfoods include salad dressing, toppings, and come in their own sturdy bowl with a lockable lid and fork. They’re a quick and easy way to pack a healthy lunch on the go, and when you like to sleep as late as possible like I do, this time saver is a lifesaver for me!

Sprinkle on your toppings, add as much or as little dressing as you like, lock the lid on, shake it up, and eat!   • I love these salad kits and they come in handy for the nights I don’t feel like cooking, I usually keep cooked chicken strips in the freezer, so I take some of those out and throw into the salad, there dinner done!!

  • oh my gosh! the Strawberry Harvest Salad looks like it would be my favorite! although they all look good, I just started with having an obsession with strawberries in my salad 🙂 makes for the perfect summer salad. have never tried these before. will have to keep my eyes open for them
