When it comes to camping cuisine, there are some traditional foods that come with us every single time. Hubby’s famous cheesy omelets stuffed with peppers and mushrooms, classic campfire hot dogs, and roasted marshmallows (of course!) to name a few.
Sometimes change is a good thing though, so when we were getting ready for our recent camping trip, I asked on Facebook for some suggestions for new camping food ideas. You did not disappoint! Several readers suggested making banana boat s’mores, and I knew my girls would go bananas for this sweet and sticky s’mores-inspired treat. These make a great gluten-free alternative to traditional s’mores too!
I love how very simple these banana s’mores are to make, which is a good thing when you’re roughing it in the great outdoors. Start by slicing a ripe banana almost in half, through the skin and fruit but being careful to leave the skin uncut on the opposite side. With a ripe banana, you can bend it a bit which opens up the slit making space to slide some dark chocolate and mini marshmallows in there.
I splurged on this bar of Lindt Excellence dark chocolate. I hemmed and hawed whether to get the Caramel & Sea Salt bar or the Chili infused chocolate, but ended up going with the caramel. No, I don’t regret it!
Once you’ve got the chocolate and marshmallow in there, you can wrap your banana s’mores in tinfoil and heat them in the campfire. But since we’re currently under a fire ban, I cooked them in a small pan on low over the camp stove instead. (Tip: add a little oil or butter to the pan first to keep the bananas from burning to the pan.)
Once the chocolate and marshmallow melt into a gooey, delicious topping on the warm banana, serve hot with a spoon for scooping and bask in the appreciation of your family!
Banana S'mores
Ingredients
- One banana per person
- 1 tablespoon chopped dark chocolate or chocolate chips per banana
- 6-8 mini marshmallows per banana
Instructions
- Slice each unpeeled banana down the middle, taking care not to cut through the skin on the opposite side.
- Stuff slit in banana with layer of dark chocolate pieces along length of entire banana.
- Stuff with mini marshmallows along length of entire banana.
- Wrap in tinfoil and heat in campfire or cook on low over camp stove until chocolate and marshmallows melt.
- Serve hot.
This sounds like a wonderful recipe that my grandchildren would enjoy, I’ll be passing this on to them. π For me I’d have to substitute milk or white chocolate for the dark stuff – I simple don’t like that.
