The craziest time of the day around here is bedtime, and just slightly behind that is dinner time. There are two of us adults here to get the kids ready for bed though, and on weekdays there’s just one of me getting dinner ready while wrangling the kids at the same time. Anything that helps me put healthy and delicious food on the table without a whole lot of fuss, prep, or time is a winner in my book!

You’d think with it being summer right now I’d have all sort of extra time. Ha! We’ve always got something going on, and with the kids home during the day it can be even more challenging to get everything on my list done. We were rushing around running errands yesterday, so I was already behind when I grabbed some chicken to start making dinner. I quickly put my favourite sweet and spicy balsamic chicken in the oven, but I wasn’t sure what to make with it. I ended up grabbing a package of Seeds of Change organic quinoa and brown rice with garlic and decided to make some lettuce wraps with it.

I couldn’t believe how easy it was to do. I just opened up the package and heated it on high in the microwave for 90 seconds. You can warm up Seeds of Change on the stove top too, but it was the convenience of microwaving it right in the pouch that really grabbed me.

I washed and dried some lettuce leaves, filled them with a spoonful of Seeds of Change quinoa and brown rice, added a couple slices of chicken, then drizzled some sweet and spicy balsamic sauce on top. Yum!

I love it when a recipe I already know and love can be adapted into something new and delicious. These lettuce wraps were a big hit with everyone, and I was really impressed with how well the quinoa and brown rice turned out. Ready to eat in just a minute and a half, the texture of the rice was just right, not mushy at all, and the light garlic seasoning went really well with the balsamic chicken.
